One of my fondest memories of complimenting Italian cuisine happened during a trip to Rome. I found myself in a small, family-owned trattoria tucked away in a charming alley. When the steaming plate of homemade spaghetti was placed before me, I couldn't help but marvel at its simplicity and beauty.

It was an extraordinary dish that transported me to the shores of Italy. Unable to contain my excitement, I called the waiter over and exclaimed, "Questo piatto è incredible!" (This dish is incredible!)

Massimo Bottura, renowned Italian chef and owner of the three-Michelin-starred Osteria Francescana, emphasizes the difficulties to change ingredients in Italian cuisine: "In Italy, there are certain customs you can’t touch: the pope, the soccer team and the traditions.
